Extract beer recipes
Extract recipes are for homebrewers of all skill levels, and use either liquid or dry malt extracts. Some specialty grains may also be included, however the brewing process is pretty simple and requires only basic supplies.
This is a great place to start if you have never made beer before.
Brown Ale
Category: American Brown Ale
A tasty brown. Smooth, with lots of chocolate flavour.
Ingredients:
- 6 lb. Amber Dry Malt Extract
- 1/2 lb. Crystal Malt, 30l.
- 1/4 lb. Black Patent Malt
- 1/4 lb. Chocolate Malt
- 2 oz Fuggle Hops
- 1/2 oz Cascade Hops 5.8%AA
- Yeast: Safale US-05 American Ale Dry Yeast
This recipe was originally made with a 6 gallon initial boil volume. A smaller volume could be used if desired.
Steep the grains at 160 degrees for 30 minutes, then remove.
Add malt extract and bring it up to a boil.
Add 2 oz Fuggle hops for 60 minute boil.
Add 1/2 oz. Cascade hops for 15 minute boil.

- .5 oz. Cascade (Whole, 5.50 %AA) boiled 0 minutes.
- Yeast: DCL Yeast Safale S-04 Top Quality Ale Yeast
Notes:
This amber ale is great as it is, but perhaps try and improve with a more appropriate yeast.

All grain beer recipes
All grain beer recipes are for more experienced brewers as they require extra steps in the process.
These recipes use all grain (no malt extracts) as their base. It’s generally considered more advanced brewing, but don’t be intimidated as a homebrewer – the process is a lot easier than you think.
American Ale
They don’t get much simpler than this. A beer even your mother would love!
Ingredients:
- 7 lb. 2 Row Pale Malt
- 1 lb. Corn Sugar
- 1 oz Cascade Hops 5.8%AA
- 1 oz Hersbrucker Hops 3.3%AA
- Yeast: Safale US-05 American Ale Dry Yeast
Use infusion mashing. 1.75 gal at 160 degrees. Mash time: 1 hour.
Sparge with 3.5 gal. water at 170 degrees.
Add water to bring to 6 gal.
Add Corn Sugar
Amber Ale
My personel favorite!
Ingredients:
- 9 lb. 2 Row Dingmans Malt
- 1/2 lb.Cara Red
- 1 lb. Crystal Malt 60 L
- 1/2 lb Dingmans Pils
- 2 oz Hersbruck Hops
- Yeast: WPL004 Irish Red Yeast
Use infusion mashing. 2.75 gal at 165 degrees. Mash time: 1 hour.
Sparge with 3 gal. water at 170 degrees.
Add water to bring to 6 gal.
1-1/2 oz Hersbruck Hops , 60 min. boil.
1/2 oz Hersbruck Hops: 15 min. boil.
Northern Brown Ale
