Monk Saison
First & foremost a quenching & refreshing summer beer.
Batch 9 of the Saison – a little different to the norm…it has been “spiced” with Szechuan Berries and Star Anise. The result is a beer showing a distinctive perfume of lavender (to the nose), pithy citrus and a woody anise character from the Star Anise.
Its quite unusual and sits well with the more “left field” beers circulating in craft at the moment (think NEIPA’s, Milkshake IPA’s etc)

Monk Belgian Berry Brune
Our ‘Monk Belgian Berry Brune’ has been produced to welcome in our autumnal season…. as the days begin to shorten, and a gentle coolness gradually permeates either end of the day, the pleasure derived from imbibing more malty, complex and hearty beer styles increases.
Our first foray for 2019 is a smooth and creamy Belgian Brune (or Dubbel)! The malt bill for this beer is designed to accent milk chocolate (ideally the creamy subtle richness of Belgian milk chocolate) layered with restrained notes of dried dark fruits. Complementing this – the intent being to acknowledge how gentle and delicious our autumn can be – is a judicious addition of pure strawberry puree, added post primary ferment while the beer was ‘resting’.
The result is a ‘beery’ version of a continental chocolate and strawberry swirl ice-cream, all elements entwined elegantly together ……but you judge for yourself.

Monk German Altbier IPA
Altbier is a sentimental favourite for our brewer. Indigenous to the Rhineland city of Dusseldorf, this is a style not seen in Australia as the Alt brewers package their beer in a traditional manner and have no predilection to export. Perhaps best understood as a German version of Brown Ale, it is both a reflection of pre-industrial beer AND a refusal to be seduced by the all – consuming predilection with lager . . . in every sense of the word an “iconoclastic” beer style.
The Monk German Alt IPA is a beer in two halves: the malt bill is ‘classic’ in composition and brewed, on the process side, as authentically as is possible on a ‘single infusion’ kit. The result is a moderate to full palate almost akin to an Anzac biscuit. The hopping regime is the twist . . . a completely new German hop – a cross breed of US Amarillo – is applied as per a US style IPA. Alts can present as quite bitter in Germany – not aromatic – so we’ve pushed the boundary by judicious dry-hopping to see how the German grown aroma hop works within an age-old style. Monk “St Clemens” XPA
“Monk St Clemens XPA” – The acronym ‘XPA’ is a recent – and somewhat nebulous – term, to describe a beer that sits somewhere in style between an American Pale Ale and an American IPA; essentially a hop forward beer bolder than an APA but milder than an AIPA. The reality is brewers are interpreting the style in a myriad of ways – for the most part producing lighter-bodied ‘fruity’ expressions devoid of the piney and resinous characters that can typify both the aforementioned styles.
“St Clemens follows this path – a soft ‘biscuity’ malt profile sits under a layering of late hop additions of Lemon Drop (lemony) and Amarillo (tangerine/orange), hops renowned for very ‘citrusy’ aromatic and flavour profiles. The intention is to deliver a ‘summer’ Pale Ale ideal for long lazy sunny afternoons….

Monk Belgian Brune V2
Version 2 of our Belgian Berry Brune . . . . the malt bill for this beer is designed to accent a smooth Belgian milk chocolate character layered with restrained hints of dried dark fruits. Further complementing this profile is a judicious addition of pure strawberry puree’ added during secondary maturation while the beer was conditioning.
The idea is to produce a medium-bodied festive beer with hints of chocolate ‘mousse’ and strawberry – tasty but not too heavy.
