Small Batch Preservative Free

Brewed In-House

Our Award Winning Beer and Farmhouse Cider is produced in our Small Batch Fremantle Brewery.

Monk Beer Production
We start with Water. We mash into a mash tun, drain the liquid from the mash via our Lauter Tun (also the Mash tun). Bring to the Boil and mash out. Throw in hops. Whirlpool it and Transfer to Tanks where it sits for approx. 2 weeks as the yeast turns into beer. After Fermentation, the yeast settles into the cone portion of the fermenter until we deem ready. The Beer is transferred to our bright tanks, the beer is then carbonated and kegged and usually tapped immediately so its fresh (in fact it only travel 20m in its whole lifetime)…now that’s fresh!

First & foremost a quenching & refreshing summer beer.

Batch 9 of the Saison – a little different to the norm…it has been “spiced” with Szechuan Berries and Star Anise. The result is a beer showing a distinctive perfume of lavender (to the nose), pithy citrus and a woody anise character from the Star Anise.

Its quite unusual and sits well with the more “left field” beers circulating in craft at the moment (think NEIPA’s, Milkshake IPA’s etc)

  • Monk Belgian Berry Brune

Our ‘Monk Belgian Berry Brune’ has been produced to welcome in our autumnal season…. as the days begin to shorten, and a gentle coolness gradually permeates either end of the day, the pleasure derived from imbibing more malty, complex and hearty beer styles increases.

Our first foray for 2019 is a smooth and creamy Belgian Brune (or Dubbel)! The malt bill for this beer is designed to accent milk chocolate (ideally the creamy subtle richness of Belgian milk chocolate) layered with restrained notes of dried dark fruits. Complementing this – the intent being to acknowledge how gentle and delicious our autumn can be – is a judicious addition of pure strawberry puree, added post primary ferment while the beer was ‘resting’.

The result is a ‘beery’ version of a continental chocolate and strawberry swirl ice-cream, all elements entwined elegantly together ……but you judge for yourself.

  • Monk German Altbier IPA

    • ABV: 6.2%
    • IBU: 40
    • OG: 13.1
    • FG: 2.2
    • Grains: JW Signature, Munichs, Vienna
    • Yeast: US 05
    • Hops: Loral, German Amarillo
    • Availability: Seasonal

Altbier is a sentimental favourite for our brewer. Indigenous to the Rhineland city of Dusseldorf, this is a style not seen in Australia as the Alt brewers package their beer in a traditional manner and have no predilection to export. Perhaps best understood as a German version of Brown Ale, it is both a reflection of pre-industrial beer AND a refusal to be seduced by the all – consuming predilection with lager . . . in every sense of the word an “iconoclastic” beer style.

The Monk German Alt IPA is a beer in two halves: the malt bill is ‘classic’ in composition and brewed, on the process side, as authentically as is possible on a ‘single infusion’ kit. The result is a moderate to full palate almost akin to an Anzac biscuit. The hopping regime is the twist . . . a completely new German hop – a cross breed of US Amarillo – is applied as per a US style IPA. Alts can present as quite bitter in Germany – not aromatic – so we’ve pushed the boundary by judicious dry-hopping to see how the German grown aroma hop works within an age-old style. The call is yours to make . . .

  • Monk Extra IPA

    • Hops: Barbe Rouge

Rich and Wholesome with distinctive choc and roasted coffee accents. This is an ale to be savoured and enjoyed on cold days.

  • Monk Extra Extra (Double) IPA

    • ABV: 8.2%
    • IBU: 85
    • OG: 17.8
    • FG: 2.5
    • Grains: JW Signature, Crystal, Wheat, Dextrose
    • Yeast: US 05
    • Hops: Loral, Mosaic, Styrian Wolf, Azacca

A turbo-charged version of our Extra IPA. A significantly stronger beer across all thresholds. juicier, fruitier, more bitter and more alcoholic. Approach with caution!

  • Monk X Innate Snow Leopard Imperial IPA Collaboration

Elusive and ethereal, graceful and yet powerful, a beast of mythical proportions – the Snow Leopard is recognised as a symbol of silence, mystery, perception, intuition, determination, experience and balance…our hope is you see this reflected in our beer.

  • Monk Bounty Cherry Ripe

This year our version of Bounty continues to honour an unhealthy predilection for the mutinous tradition. The base recipe is brewed out to make a more chocolate accented stout avoiding overt roast characters; a small quantity of dark chocolate was duly added towards the end of boil. Following primary fermentation, the temperature was lowered for..

  • Monk Red IPA

    • ABV: 6.2%

    • Yeast: US 05
    • Hops: Loral, Idaho 7, Citra
    • Availability: Specialty

While its roots may arguably rest in the original Irish Red Ale tradition, the contemporary deviation of American Red IPA yet again reflects the unmistakeable innovation of the American craft brewing scene. Moderately bitter with notable hop derived flavours and aromatics reminiscent of American IPA’s, the “Red’ is more malt driven and delivers notable caramel,..

  • Monk Kiwi Pale Ale

    • ABV: 5.6%
    • IBU: 35

    • Yeast: US 05
    • Hops: Experimental NZ 4337
    • Availability: Seasonal

While not officially a recognised beer style for judging purposes, craft brewers increasingly are producing light-bodied, refreshing, easy-drinking ales highlighting the unique character traits of New Zealand aromatic hops – and they make for perfect warm weather drinking. Our Spring Kiwi Pale Ale showcases Tasmanian malted barley – with a touch of Carapils malt to..

  • Monk Saison Szechuan and Lime

    • ABV: 6%
    • IBU: 35
    • OG: 12.6

    • Availability: Seasonal

Saisons are essentially a Belgian Pale Ale, originating from Wallonia, a French-speaking region of Belgium, and are classified as a ‘farmhouse’ ale. Saisons were originally a lower alcohol beer served to farm workers during summer (these lower alcohol versions are referred to as ‘Grisettes’- we are bringing forward our version for the summer months) as..

  • Monk “St Clemens” XPA

    • ABV: 5.4
    • IBU: 30
    • OG: 12.6
    • FG: 2.6
    • Grains: Ale Malt, CaraPils, Rolled Wheat
    • Yeast: US 05
    • Hops: Amarillo, Exp 4337. Lemon Drop
    • Availability: On Tap

“Monk St Clemens XPA” – The acronym ‘XPA’ is a recent – and somewhat nebulous – term, to describe a beer that sits somewhere in style between an American Pale Ale and an American IPA; essentially a hop forward beer bolder than an APA but milder than an AIPA. The reality is brewers are interpreting the style in a myriad of ways – for the most part producing lighter-bodied ‘fruity’ expressions devoid of the piney and resinous characters that can typify both the aforementioned styles.

“St Clemens follows this path – a soft ‘biscuity’ malt profile sits under a layering of late hop additions of Lemon Drop (lemony) and Amarillo (tangerine/orange), hops renowned for very ‘citrusy’ aromatic and flavour profiles. The intention is to deliver a ‘summer’ Pale Ale ideal for long lazy sunny afternoons….

  • Monk Belgian Brune V2

    • ABV: 6.5
    • IBU: 30
    • OG: 14.4
    • FG: 2.4
    • Grains: Pils, CaraMunichs, DRC, CaraAroma
    • Yeast: BE 256
    • Hops: Loral, Barbe Rouge
    • Availability: On Tap

Version 2 of our Belgian Berry Brune . . . . the malt bill for this beer is designed to accent a smooth Belgian milk chocolate character layered with restrained hints of dried dark fruits. Further complementing this profile is a judicious addition of pure strawberry puree’ added during secondary maturation while the beer was conditioning.

The idea is to produce a medium-bodied festive beer with hints of chocolate ‘mousse’ and strawberry – tasty but not too heavy.

Merry Xmas and Happy New Year!!
