Perceived by many as the quintessential “abbey” beer, ‘Dubbels’ emerged from the monastic brewing tradition attributed to the Cistercian Order of Monks, who emphasise vocation as a central tenet of ‘living’ their faith. Characteristically ‘darkish’ brown in colour, hallmarks of the style are notable yeast derived fruity esters and a rich, complex, malty palate laden with biscuit, chocolate and caramel overtones. We chose to add a small percentage of malted rye to our malt bill, the idea being to dry out and focus the length and finish of our Dubbel, essentially balancing any perceptible sweetness. An indulgent indulgence.
